Few drinks look as refreshing as a brightly colored sparkling soda filled with fresh fruit and plenty of ice. This Blue Soda Splash combines naturally vibrant butterfly peach tea with sparkling water, juicy grapes, citrus, and fragrant basil to create a beverage that is light and colorful.
It takes only a few minutes of hands-on work, plus chilling time for the tea, yet the layered colors and lively bubbles make it feel worthy of a café menu. It suits a warm afternoon at home as much as a gathering with guests.

Ingredients

The key to a refreshing soda is balancing fizz, fruit, and gentle sweetness. You will need:
- 2 teaspoons dried butterfly pea flowers
- 1/2 cup hot water
- 1 cup chilled sparkling water
- 1 tablespoon fresh lemon juice
- 2 teaspoons honey or simple syrup
- 4 green grapes
- 1 thin grapefruit wedge
- 3 fresh basil leaves
- 1/2 cup ice cubes
This makes 1 large glass.

Steps

Brew the butterfly pea tea in advance so it has time to chill, then build the drink in this order:
1. Place the butterfly pea flowers in a heatproof cup and pour the hot water over them. Steep for about 5 minutes, until the liquid turns a rich blue. Strain out the flowers, let the tea cool completely, then refrigerate it for at least 20 minutes.
2. Fill a serving glass halfway with the ice cubes. Add the whole grapes and gently press one with the back of a spoon to release a little juice without crushing it completely. The fruit should add freshness, not turn into puree. Tuck two basil leaves beside the ice so their aroma gradually infuses the drink.
3. Pour the chilled butterfly pea tea into the glass. Stir in the honey and lemon juice until the honey has fully dissolved. As the citrus blends into the tea, the color gradually shifts from deep blue toward violet-purple, a bit like a tiny science experiment you can drink.
4. Slowly pour in the chilled sparkling water. Give the drink one gentle stir, then garnish with the grapefruit wedge and the last basil leaf. Serve right away.

Start with Cold Ingredients

A few small techniques make a noticeable difference, and temperature comes first. Sparkling water keeps its fizz much longer when everything is well chilled, so refrigerate the tea, fruit, and glasses before assembling the drink whenever possible. Cold ingredients also melt less ice, which keeps the soda from becoming diluted too quickly.

Balance Sweet and Bright Flavors

Butterfly pea tea has a very gentle taste, which makes it a good base for citrus. The lemon juice brightens the drink, while honey softens the acidity without making the soda overly sweet. Taste before serving. Grapefruit sweetness varies, so you may want a little more lemon or an extra drizzle of honey.

Choose Fresh Garnishes

Fresh basil contributes a clean herbal aroma that pairs well with citrus and sparkling water. Whole grapes provide little bursts of sweetness between sips, while the grapefruit wedge releases fragrant citrus oils every time the glass is lifted. Simple garnishes are often the easiest way to make homemade drinks look professionally prepared.

Experiment with Seasonal Fruit

Once you master the basic recipe, you can easily create new versions. Fresh blueberries, strawberries, orange slices, raspberries, or thin kiwi slices all work well with the colorful tea. Changing the fruit throughout the year keeps the drink interesting while preserving its light character.

Serve at the Perfect Moment

Sparkling drinks are at their best when served immediately. Prepare the tea, fruit, syrup, and garnishes ahead of time, but wait until the final minute to add the sparkling water.
Lykkers, Blue Soda Splash turns a handful of simple ingredients into a colorful homemade soda. If you are serving several people, line up all the glasses first and finish each one just before bringing it to the table, so every guest gets bright color, lively bubbles, and crisp fruit.
