Duck teriyaki soba is a flavorful noodle dish that combines tender duck with chewy buckwheat noodles, earthy shiitake mushrooms, crisp vegetables, and a glossy homemade sauce.
Each component brings something different to the plate, from the rich duck to the fresh bite of scallions and carrots. The recipe takes a little preparation, but the finished dish offers a satisfying combination of sweet, savory, and fresh flavors.
Ingredients
The recipe has three parts, so the ingredients are grouped the same way. For the teriyaki sauce:
- 120 ml water
- 60 ml tamari
- 60 g brown sugar
- 1 tablespoon grated fresh ginger
- 1 teaspoon cornstarch
- 1 tablespoon cold water
The duck is rolled around a simple vegetable filling. For the duck rolls:
- 2 duck pieces, about 200 g each
- 1 medium carrot
- 4 scallions
- 1 tablespoon neutral cooking oil
The noodles are tossed with mushrooms and a light seasoning, then plated with greens. For the soba noodles:
- 180 g soba noodles
- 100 g shiitake mushrooms, thinly sliced
- 1 tablespoon tamari
- 1 teaspoon sesame oil
- 1 teaspoon of the teriyaki sauce
- Fresh greens, for serving
This serves 2. Allow about 25 minutes for preparation, 1 hour for marinating, and about 20 minutes for cooking.
Steps
The sauce comes first, since it must cool before the duck is marinated. It should be thick enough to cling to the duck without becoming heavy. Follow the steps in order:
1. Combine the water, tamari, brown sugar, and grated ginger in a small saucepan. Bring to a gentle boil, then lower the heat and simmer for 8 to 10 minutes.
2. Stir the cornstarch with the cold water in a small bowl until smooth, then gradually whisk it into the simmering sauce.
3. Cook for about one minute, stirring constantly, until lightly thickened, then remove from the heat and let the sauce cool.
4. Peel the carrot and cut it into long, narrow sticks. Trim the scallions to a similar length, then pair the carrot sticks with the scallions to make compact bundles.
5. Trim the duck as needed and place it on a clean cutting board. Make connected diagonal cuts through each piece to open it into a longer, thinner section, taking care not to cut all the way through.
6. Lay one piece of duck flat and place a vegetable bundle at one end. Roll the duck firmly around the vegetables, keeping the filling centered, and secure the end with a toothpick if necessary. Repeat with the remaining duck.
7. Place the rolls in a covered container and coat them with about two-thirds of the cooled sauce. Keep the rest for cooking and glazing. Refrigerate for one hour so the flavor can develop.
8. Bring a saucepan of water to a boil and cook the soba according to the package directions. Once tender, drain and rinse under cool water to remove excess surface starch.
9. Heat a skillet over medium heat and cook the sliced shiitake mushrooms until softened. Add the soba, tamari, sesame oil, and a teaspoon of the reserved sauce, then toss gently until evenly coated and heated through.
10. Heat the oil in a skillet over medium heat, or use a grill. Cook the rolls, turning regularly and brushing with the reserved sauce.
11. Continue cooking until the duck reaches a safe internal temperature of 74°C (165°F).
12. Remove the toothpicks, arrange the rolls with the soba and fresh greens, and finish with a light brushing of sauce.
Keep the heat at medium while the rolls cook and brush on the reserved sauce a little at a time, so the glaze builds up evenly.
Final Thoughts
This recipe proves that balanced, restaurant-quality Japanese dining is well within reach at home. By pairing savory, glazed duck with earthy buckwheat noodles and rich shiitake mushrooms, you get a clean, multi-textured dish where every ingredient shines.
Slice the rolls just before serving, drizzle with the remaining teriyaki glaze, and enjoy a deeply satisfying meal that feels both comforting and refined.
